I remember being a little kid and getting to go out to a nice restaurant with my parents. Every time we went out I had french onion soup. I thought it was just so fancy back then and I still do! It is one of those soups that can really make a meal and really make a person feel fancy even if they are just enjoying it at home and not in a restaurant. I did not use any cheese (for diary restrictions, for hubby) I know I should have for me. Next time, (since I have a bottle of port wine to use up), I will double the recipe so I can freeze some.
